Born from the wisdom of one of our oldest plots facing south-west to capture the best of the sun's rays, our cuvée « Symphonie sous bois » is a cuvée that is composed with the patience of nature. Here, the roots of pinot noir and pinot meunier plunge deeply into the memory of the soil, in search of the essence of a singular terroir, full of light and history.

Each vintage is a new score that the vine offers us. Our gesture of assembly is done directly on the plot, an instinctive harmony where the perfect balance is revealed. Then time is our ally, and the oak barrel our instrument. It is in its silence that this cuvée rises, is enriched with subtle aromas, before resting long in the cellar for more than 36 months on its lees.

The result is a « symphony under wood » that can be enjoyed as a concert. Each bubble is a note, each sip a perfect match between the richness of the fruit, the delicacy of woody aromas and mineral freshness.

It is an elegant, complex champagne, which resonates like the secret that the oak whispers in the wine.
